INGREDIENTS

  • 2 tomatoes
  • 1 onion
  • 1 yellow pepper
  • 1 lime
  • 1 cup sour cream
  • 4 tbsp mexican seasoning mix
  • 1 tsp chipotle powder
  • Pork cutlets
  • Fajitas

DIRECTIONS

  1.  Bake the pepper (cut into thin strips) at 450 degrees for 15 minutes
  2. Chop tomatoes into small chunks, mix 1 tbsp oil, add salt and pepper, lime juice and  1  tbsp of seasoning mix and chipotle.  Put aside.
  3. Pat pork cutlets dry, cut into thin strips and use remaining seasoning to coat them.  Heat 5-7 min on stove top until fully cooked
  4. Mix sour cream, lime rind, 1 tbsp oil, salt and pepper.  
  5. Warm the fajitas before adding your pork cutlets.  Top with the salsa lime fresca, cream, peppers.
